JIM’S MUM’S HOT CROSS BUNS
A hack that will only interest you if you are in Tasmania at Easter time. Hill Street Grocer sell the tastiest hot cross buns there are. Now I know that hot cross buns are a point of contention, and there are several factors that influence what makes a good bun, including toastability, affordability, spice level, and fruit distribution. Personally, I don’t want to hear about your hazelnuts or your dried apricots in a hot cross bun (Isabel Barney I’m talking directly to you). That is far too dense. This light and fluffy bun is a hack because it’s actually not Jim’s Mum who made these hot cross buns. It’s Southern Bakehouse AKA Cripps! And they are $5.20 for half a dozen! Dream.
Cut in half, grill in the oven (both sides), douse it in Duck River butter, and eat it all in one go. If your buns have been sitting on the kitchen bench for a while, they can look a bit sad, a touch of melted butter brushed over the cross side before toasting brings them back to life! I also like to freeze a few packs for later in the year!
